Bypassing the relay won't do any current draw damage. The relay is just a switch. Current protection is in the wire size and fuse.
The AC is designed to cycle on and off. It runs for a bit, cools down the evaporator to near freezing, and then the compressor shuts off for a bit. The relay's job is to do that switching, controlled by the rest of the AC system. If you jumper the relay, the AC compressor will stay on all the time. The evaporator will get colder and colder, and likely freeze up. At that point the AC won't work very well.
Also, if you have a problem with low or high refrigerant pressure, you could damage the system. If the pressure switches are what's kicking you out, jumpering the relay will take those safeties out of the system.
I wouldn't recommend jumpering the relay out for more than a few minutes at a time, and only for troubleshooting purposes.
