Perplexing problem

Both of my turbos -an '85 and an '89, are doing the same thing, and I am at wit's end trying to figure it out. The '85 has been with me for years, and the '89 is an auto-to-5spd project that I acquired and just finished putting together. Both will get up to any engine speed you desire with no load, and will accelerate slowly on the road, but when you get to a certain point it will just sputter. The higher the gear, the lower the rpm it does it, and the more the accelerator is depressed the worse it gets. I have been going pretty thoroughly through the fuel injection and ignition (and fixed a few things along the way), but cannot get it to behave.
Has anyone experienced these symptoms before, and figured out what it was? I guess my next point will be to check the compression but my gauge is out of town. I am worried that I have a head/gasket problem on both (won't that be fun).
