It takes me about 2.5 hours to change a clutch assuming nothing goes wrong. I don't think there is much opportunity to shave time off that, and I'd bet that "book time" is near double. They always leave a little leeway in the labor books to account for things that on average do go wrong... I think 4-5 hours is probably about what the book says, and I'm pretty sure you're looking at $300 to $400 in shop-priced parts. I think $700 is more or less exactly what Average Joe's Shop would charge; a dedicated Saab indy might charge less, especially if s/he's familiar with your car.
As a DIY job, there are MANY worse things you could face. I'd rather do a clutch than a dozen other jobs. Sometimes, I do it for fun! Um... as long as you've got a helper, basic hand tools, a Home Depot, and two days and a six pack to get the job done I wouldn't hesitate to recommend it as a good way to scrape some knuckles, make up some new curse words, and get really intimate with your car. If you need to be back on the road tomorrow and/or you're a big sissy boy, leave it to someone else. :D
Seriously... the first time I did a clutch job I nearly cried. It was absolutely *brutal*, involving all sorts of tools that have no business being around a car. But that was back when TSN was a mailing list, and answers over the internet came really slowly. If you've got some allen-head wrenches, a screw driver, a prybar, some big fat nuts (for the car, not the other kind), some 3/16" threaded rod, and 10-13mm sockets, you're pretty much ready to go. You'll need someone to help you remove the hood, wipe off your sweat and bring you beers, but mostly it's a one-person job. if a shop can do it in 2.5 hours, you can easily do it in 20! :)
