Shifting from drive to reverse while on a rack, wheels off the ground, is unlikely to hurt anything in your transaxle although I don't recommend doing that. By doing so you moved pressure control valves in the valve body so as to release the forward drum clutch and apply the direct drum clutch and the rear band. With very little resistance (wheels off of the ground) to transaxle output the shift would just occur with only slight strain on the friction clutches and gear train and probably no damage at all. The friction elements, mainly the rear band, would be the weak link in that situation. If you did the same thing while ripping along the highway you could really hurt something. It would be a matter of which gives up first; a friction element or some teeth in the gear train.
Just don't know about the whine above 65 mph. Could be a lot of things; pinion bearings, differential side bearing, axle bearing, input shaft bearing, one way clutch, pump, etc. You'll probably just have to live with it unless it gets noisier so that it's source can be found. Cheers
