You should replace them one-by-one. It's pretty hard to make any mistakes if you do it that way. Did you get a kit, or something?
There are lots of tubes under the hood, so it's easy for someone to find it confusing. There's a sticker on the inner fenderwell that shows the routing of the engine vacuum hoses. Also present in the same fenderewell are tubes for the cruise control.
Some folks replace the tubing for the windshield washer fluid. If you have some larger diameter hosing, they're probably for the three hoses on the APC valve which is located next to the coil.
Your best bet would be to replace all the tubes at some point, but the ones located within the engine bay should be the first priority because they are exposed to the most heat and are consequently probably in the worst shape.
Your best bet is to be patient, and maybe draw a diagram of the current routing of hoses for future reference, but if you replace them one-by-one, you shouldn't need a diagram. The worst thing to do is remove all the hoses at once.
