Generally speaking, oil *consumption* is not a head gasket problem, since the oil should be staying in the bottom end, away from the head gasket. If it's just up and disappearing, you probably have some blow-by resulting from relatively normal engine wear. If you have a LEAK, that could be a headgasket or a number of other seals.
Unless you physically see a leak or experience coolant loss, I think an oil analysis is what's called for here. Based on your description, I'd wager the problem is a bottom-end issue - worn rings, for example.
How is fuel consumption? Power? Does the oil smell like gasoline?
