So the turbo is still boosting, but likely the bearing seals are shot and passing oil.
Bypassing is possible, but not a reasonable approach for what you want to do with the car. First, the turbo is still boosting. Remove the turbo, and the car will be slow. Not just painfully slow, but dangerously slow. The turbo helps even when the boost gauge is in the white portion.
Second, you really want to stop the oil flow. So you'd need to bypass the oil flow. That will take some re-plumbing. Bypassing the exhaust and inlet air is more problematic - the hoses and castings just don't do that well. Frankly, if the turbo siezes, it won't be a whole lot worse than if the turbo was bypassed.
However, if I were you, I'd live with the burning oil for another month. You're not hurting a lot, other than the impact on the environment. Frankly, you'll make up for that in short order if you buy something newer. You may end up with a check engine light due to a clogged O2 sensor, but the car will keep running. And I think the lack of turbo boost will be very noticeable in an objectionable way.
