The no dash lights thing is REALLY weird. You should at least get the oil pressure and alternate light on if the car stalls... Does everything else electrical work? The starter is working, so it's not total electrical failure.

How badly is the tach bouncing? Just a little tremble or actually bouncing? Sudden deaths are almost always ignition related, and sudden ignition death is usually the Hall Sensor or ignition control unit. Could be a coil, however. I personally have never once observed a bouncing tach on a Saab, so its presence or lack thereof mean little to me... :)

If you crack the fuel rail to see fuel pressure and thusly bleed it off, do you get fuel pressure again after cranking? Generally speaking even a dying pump or clogged filter will give you a stutter or a slow death as fuel pressure dies off. That said, a seriously failed AMM or FI ECU could kill the car if you don't get enough fuel or the ECU stops cycling the injectors...

If you disconnect the AMM, do you get a CEL? LH 2.2 cars are not very good about starting without an AMM like LH 2.4 cars are, so I wouldn't read much into that test.

A blown-off coupling in the intake tract can cause this, but those problems usually don't fix themselves, and certainly not for an extended period of time. They would certainly resurface during any normal driving.

I'd say you need to carry an LED injector tester and an inductive timing light with you. Next time it happens, connect the LED tester to a couple different injectors to make sure you're getting a pulse, and the timing light to a couple different plug wires to make sure you're getting spark. Those tools take up little room, won't get you dirty, and can be done easily with one person on the side of the road. I would be sure you buy a second set of these tools if you already have them - keeping them in the car where they're handy will ensure you never have the problem again. :)
