Let's get this straight - the engine will run, but only at high rpm with a wide open throttle. That's not a sign of a fuel pump with no or low pressure - you're getting fuel. That might be the problem.
The gas pedal isn't a gas pedal - it's an air pedal. The throttle opens and lets in air, and the engine control decides how much fuel to add. An engine running too rich will stop just as quick as an engine running too lean. My guess is that you've got a lot more fuel pressure than you used to, and only by opening up the throttle all the way can you get enough air to balance off the fuel coming in.
Did you damage the fuel pressure regulator (FPR) in the process of replacing the fuel filter. Is the FPR working properly? Pull the spark plugs - do they all look rich, or just one?
Thoughts would be a blown or leaking FPR, or one or more injector stuck open. But low fuel pressure wouldn't cause the engine to only run at high rpm, and the system is designed such that at when you've got more fuel pressure and flow than required, the FPR bypasses it back to the tank. Did you crimp/kink the return line to the tank, causing excess fuel pressure? Did you mess with the check valve at the tank, also causing excess fuel pressure?
