Reverse has no synchromesh feature so sometimes the idler gear is all lined up and pops right in and sometimes it isn't and you have to roll the gears a little before it will engage. Of course you can't really roll the gears with the engine off (except by rolling the car) so what you are describing is perfectly normal behavior. Shifting into first gear will often bump the gears just enough to then allow reverse to engage but not always. With the engine running all you need to do is let up on the clutch for a second while in neutral and then clutch and try reverse again. There is nothing you could have done while draining the fluid that would screw up the transmission. "Touching" the shift coupler or the "Boot" (which I'm guessing is the rod seal) would not affect shift performance (unless you "Touched" them really, really hard). If your shift lever jumps as you decelerate that's most likely an indication of a bad motor mount and that can affect ease of shifting. The front motor mount is the typical suspect but a side mount can also have this effect. They are easy to check. The other common culprit for poor shifting is the rubberized coupler. They can partially separate and fail to fully convey shift lever motion to the gearbox. Also easily checked.
Lastly, as far as shifting into reverse goes, while sitting still with the engine off it makes absolutely no difference what kind of oil is in the gearbox. It should shift into reverse normally even with no oil at all, so your choice of oils is not a factor relative to your question. Of course good transaxle performance (judged while running) does hinge partly upon using good oil and there are different opinions about what that is (read all the posts here on that topic) but the most important thing may be to ensure that the level is correct.
