I don't believe the gasket is usually removed to replace the windshield.
If it were removed they probably would use a razor knife to cut off the three flaps that extend, I think it's both top and bottom, out onto the body work where flat metal plates cover them and are screwed into the sheet metal with hex=head screws. (I think they're there to keep windshield from popping out if your head hits it after a crash.) This would involve pulling the dash and all interior trim and headliner, practically dismantling the car. A glass shop, especially a pro one, would never go that far.
The gasket is made of great rubber and good for the ages.
If they say they didn't do anything what's the evidence that they did?
Any excess adhesive can be cleaned off, I'm sure they'd be glad to do that if they missed some.
