Cold start and engine oil

1988 Saab 900S, 16 valve, 170K miles, 5spd.

I'd like some input on this. My Bentley manual recommends 10w-30 motor oil for my engine. On cold mornings, with the recommended 10W-30 motor oil, the lifters can be a bit noisy on my 900 until the oil is up on top and it warms up a bit. My engine starts right up but it also jumps right up to 2000 rpm (like you were holding the pedal down on a carbed engine) but within 2 seconds calmly settles down to 1400-1500 rpm which is where I think its supposed to be with the cold start valve.

Two questions:
1-Is it OK to run 5w-30 or even 0w-30 in these engines during cold weather to make sure the oil is getting up to the valve train quickly?

2-Is a cold start jumping to 2000 rpm then settling rapidly to around 1500 rpms normal for this engine? My 1986 8 valve 900 didn't do that.
