Little surprised to hear your 8 valve didn't raise the cold idle as it has a cold start injector and an Aux Air Valve. In cold weather, my 8 V rises to approx 1500 or so and then drops down to 900 after warmed up. Also the cold pressure regulator allows extra fuel at start up.

Would have through with Jetronic you'd get a flatter idle regardless of ambient temp.

I see no advantage in running anything lighter than 10W30 partly because that is recommended and partly because you can get decent flow from synthetic or semi synthetic at 10W30 (or even 5W50 or 15W50 if synthetic). There are other tricks you can apply such as a block heater oil heater etc. Higher mileage engines may also benefit from a heavier oil.
