'92 Saab 900s 16v non-turbo running rough

I just bought this conv't yesturday and ordered all of the tune up items from eeuroparts.com today. I brought it in to get the oil changed and the oil was running like black water. It's black, not milky and there isn't any smell except oil. When the oil spilled down the side of the filter I could see what looked like bubbles and assume this is water that has separated. The local mechanic/glorified oil change guy told me it was from condensation so he did something to clean/dry out the water and changed the oil. This doesn't seem to have fixed the problem. The car is hard to start. It needs a lot of gas to get going though drives fine once I'm actually moving. When it idols it idols rough. It will idol down to almost dying then rev really high. The new distributor cap, rotor, plugs, wires & fuel filter are on the way though the ones in there look recent and I suspect they aren't the problem. Any suggestions would be greatly appreciated. I'm sorry this is long though I want to do whatever I can to make this Saab work well. It's a Christmas gift for my wife (which she doesn't know) because our favorite car ever was an '86 Saab 900 we gave up about 15 years ago for a mini van as we added the 4 kids. Having a 900 again will put her in heaven and being a convertible is just a bonus. Thanks in advance for your help and being such a great group.
