hi the switch in the upper radiator hose, screwed into the T fitting that makes it two hoses? That one is to cut the AC compressor when too hot.
the thermo switch in the top left (viewed from inside the car) is the switch to tell the fans to come on. If they are coming on then it's at least working, could be swapped for colder switch to com on earlier, but...
If the thermostat goes NFG (closed) the temperature will quickly peg the red side.
If you can impact the temperature with speed and load, as in 45 in high gear with light throttle constantish speed and temp is medium to cooler, and then run it to 75 with lots O throttle and it gets warmer... and on the other hand you are poking along in stop and go and it wants to be much hotter than the hotter of above... it's time for a new radiator. you can do the thermostat too, but the radiator is only flowing water across a portion of it's fins, easy to cool at speed with lots of air flow across it and light load, anything else and it can't keep up.
