I've never heard a wheel bearing make a thump noise, and I can't comment on whether it would make a noise unloaded. You should be able to isolate that by driving in circles at low speed - if the sound changes as you load or unload the suspect side, you have your answer.
Axles should not move at all! It's a one piece affair once assembled, so the axle is being held in place by the axle nut. If it's moving around, that means either the wheel bearing is damaged, the axle nut is not on, or the driveshaft is not properly secured at the CV joint.
If you could move the old axle around, that leads me to suspect it was not properly installed, and that could directly lead to wheel bearing damage.
Have you taken the wheel(s) off and run the car on a lift? That should give you some visibility to that area...
