I have an '85 SPG with 120K miles. I'm the second owner and purchased her about 10 years ago at that time she had about 60K. To date (knock on wood) the wiring has been OK. The only places where it is going bad is where it is exposed. That is, peel back some of the tape wrap near the connectors and the wire insulation under there still looks OK. My local Saab indie shop feels only where the wiring insulation is "exposed" will it crumble.
To date I've just wrapped any crumbing insulation with electrician's tape to stabilize and cover exposed wire. I've only had to do that in two places - but the car has always performed great with the exception of the AMM that went a few years back.
Unless you have a lot of time I think you should just go after what is bad. Normally I'm for doing it right the first time, but I know if I start down that road (preëmptively) with my SPG it'd probably never get done due to "too many hands on my time" and I don't think I can afford to have someone else do the job.
