You are certainly correct that tapered threads will have no use of a sealing washer (but generally require thread sealant). The oil pressure sending unit does not have tapered threads and does bottom in it's threaded bore. The coolant temperature sending unit does have 1/8" tapered threads. I've attached pictures showing each and you can plainly see the OEM sealing washer on the oil pressure sending unit. That washer is captive on the unit but seems to work OK after repeated removal and replacement, similar to a spark plug washer and could probably be replaced with one of those if necessary.
