I've bought multiple 'parts cars' for about 300 bucks...but most of them have not been reliable cars for daily winter driving...most barely got me home...
I doubt that 500 will get you a reliable car...sucks a lot worse to be broken down if its a dark february night.
With that said, 3-500 dollars is totally reasonable if the 'parts' car has a good transmission, and tons of other goodies...but if you're buying an "S" model for parts for your turbo, for example, there's a lot less stuff to transfer over in the engine bay. I'd pay 300 or less for that incompatibility.
BTW, the 'poor college kid' thing is a total contradiction,,,,its just a relative comment that you have no cash in your pocket. You'd just drive the 900 in the winter if you're really that 'poor'. Or you'd have a bus pass if it were really true. Hope your education won't land you on a state capital common whining about bad choices. My 900-s lasted through both undergrad (85 900T) and my 92 900T lasted through 8 years of grad+Postdoc and is still rocking the MA winters 12+ years into ownership.
