So, took the car to B&B Saab near San Jose. They are one of only 2 SAAB dealers left in CA. They have mechanics that worked on these cars when they were sold new, so it was great to have that perspective. RESULT? Nothing wrong with the cooling system at all. Temperatures checked out, fan kicked in when it was supposed to. Mechanic specifically recalled this being a "concern" of owners 20+ years ago and that there is nothing wrong.
So, $150 spent, but peace of mind. Looking forward to dropping the top in the increasingly nice weather.
Thank you to all that made suggestions. I was betting it was the radiator being constricted, but I guess it is normal.
