Though these things are hard to diagnose from afar, my reaction is the coolant temp sensor is challenged or the connection is .... you might look at the wiring for it, and see if there is corrosion inside the connector.
It is a maintenance item, eventually they need to be refreshed.....not an expensive part, a bit fiddly to get out without making a mess of things, coolant escaping, etc. Do the quick swap as long as you have a sealing ring or gasket ring to get the old out, and immediately plug the hole with a new one with the gasket loaded.
Yours might have a scale built up on it that acts like an insulator that could be affecting the performance of the sensor.....
You could get a new one, plug in the sensor with the engine cold and see how it starts. Ground it to the engine, connect the sensor and see if it runs any better for starters. Clean the connector noting if there is any green corrosion.
When you have the new sensor in hand, get a deep socket that fit to it and the area before you try to sneak it out of the head. The new and old should be the same, but you never know.....
