This could be a tough one but here's a thought: Your engine is overheating and the "Knocking" is actually pre-ignition. Why is it overheating? How much was skimmed off of the head? Compression ratio goes up as the head gets thinner. You can hear the coolant cap hiss which tells us the coolant system is too hot BUT that sound should be drowned out by the fan running for ten minutes after shutdown with hot coolant. Is that fan running? When these heads warp they can also develop cracks, was it checked for cracks? If the head was badly warped and skimmed without first straightening that could mean that the cams are binding in their journals and failing to lube well and creating heat (I've seen it done!). Finally, you have a water-cooled turbo pumping more heat into your cooling system. I wonder if coolant is getting into the induction system under boost?
