This will sound quite boring, but I recommend stock rubber mounts for the torsion bar, and stock hydraulic for the lower engine mounts. I have run into vibration and harshness problems with solid rubber or poly.
Part of that is that I run my cars stock. Solid rubber mounts are cheaper, and poly mounts reduce engine movement. If you've made significant other performance changes to the car, then stiffer mounts make sense to contain the extra power. All by themselves, stiffer mounts won't improve performance. Stiffer mounts can increase harshness. If you've made serious performance changes, then you've made the decision to exchange some smoothness and comfort for performance.
Some folks have put in poly mounts and report no increase in harshness. That might be because they've already made changes to the car increasing noise and vibration (more power, louder exhaust....) and don't notice the difference. And some engines are just smoother than others, so you may not notice a difference. But I find replacing the mounts to be a major pain, and they're not exactly cheap. It's not a job I want to do twice. Therefore, I don't want to experiment with bushings and mounts I may have to pull out because the steering wheel now acts like a paint shaker (been there, done that). But that's just my experience and preference, your experience may be different.
