The best thing you could do is find a parts car with a manual tansmission that is preferably the same year and breathes the same as yours (turbo or non-turbo). In addition to the tranny you need the obvious: pedals, clutch master cylinder, hose between the master cylinder and slave cylinder on the tranny, a flywheel and clutch pressure plate and clutch disk, shift linkage, shifter and console cover. The axels on the manual and auto are different lengths and need to be swapped also. There are also several subtle modifications that also need to be made. The EDU on the instrument panel is different, there is a pressure transducer on the manual version for upshift indication, the automatic lockout circuit that allows the car to be started only in park on neutral needs to be bypassed and (I'm not sure about this one) there may be a lock out switch that needs to be added to your clutch pedal, depending on year.
I've looked into this, but I have not done it myself. I am recommending the route I will take if I decide to do the same thing. I cannot begin to guess what all of this would cost if you had a outsourced it to a shop. Depending on your source (and the condition) of parts, you are probably talking $750 to $2000 in parts and a good 10 - 15 hours of labor to remove the old systems and install the new parts.
