There's a temp switch on the evaporator to prevent it iceing up. Yours could be tripping at to high of a temp or your A/C is working good enough to get the temp down that far. Kind of hard to guess without knowing the pressures,inlet and outlet temps. You could tape a thermometer to the outlet line, insulate it a bit and get an idea of the evap temp.
How hot was the engine temp? there's also a switch that shuts it down if your coolant gets to hot, that could be out of tolerance but it sounds like the evap anti-freeze switch from your descrition.
Did you check for bubbles in the sight gage on the filter drier? No bubbles means a full system when its working right.
