For me, replacing a water pump is about a 3, where 1 is changing spark plugs, and 5 is replacing a timing chain. Expect about 3-4 hours of work. That includes finding tools, draining and refilling the cooling system, finding more tools, the works.
You can replace a water pump from above, but I highly recommend removing the fender inner liner and going in that way. It adds about 15 minutes each to the front and back getting the liner out and in, but it'll save you a world of hurt getting to the pump.
What else to do depends on the condition of the car, and what else has (or hasn't) been done. Since the belt(s) come off, you will want to replace the belt(s) if they're over a couple/three years old.
Some stuff you won't know until you get in there - with the belt(s) off, spin all pulleys. If they have a grinding feel, replace them.
Stuff to do before you go in - If you suspect the harmonic balancer (main pulley), draw a chalk line across the face, and start the car a few times. With the engine shut off, make sure the line is still straight. A mirror helps here. If the line isn't straight anymore, you should replace the main pulley.
Look at the motor mounts. You can see the front right from above - the rear right can be seen if you crank the wheel all the way to the left and peek in through the driveshaft hole.
If you're leaking oil from the main seal (behind the main pulley), now is a nice time to replace the main seal and oil pump O-ring. If they're not leaking, don't mess with them.
How's the alternator? Voltage levels OK? There's no better time for alternator access.
You don't need to do all this stuff, it's just that it's easy to work on with the fender inner liner out. Some of the stuff you want to do beforehand (inspect harmonic balancer, motor mounts, oil leaks) because you'll want to get the parts before you dig in. Not much you can do about the pulleys, because the belt(s) have to come off.
If the belts are pretty new, nothing is leaking oil, and the motor mounts look OK, then just do the water pump. Of course, if the cooling system is drained down, how old is your thermostat? Replace if more than 2 years old.
