I'm never quite sure when Saab engines went to a single serpentine belt with an automatic tensioner. I *think* you've got the single belt. If you have the single belt, see Quasi's page at:
http://quasimotors.gar.net/belt_install.htm
for information on how to remove the belt. Also do some archive searches on 'serpentine', as there are a bunch of ways to skin that cat. You need to remove the pulley to get the belt completely off; if you just want to get the belt off the water pump, you don't need to remove the pulley.
If you have two belts, let us know, removing the belt is different (and much easier).
The Haynes manual isn't great, but it'll help some for this procedure. You're going to jack up and support the RF of the car, remove the tire, and fender inner liner (two pieces). Drain the cooling system - it doesn't have to be all the way, but below the level of the water pump. Remove the belt from the pump. Undo the hoses, unbolt the pump and pull it off. Make sure the mating surfaces on the engine are nice and clean (no residue from the old pump gasket). Install the new pump with gasket. Installation is the reverse of removal.
You'll want a nice selection of sockets, and it's really helpful to have some offset box end wrenches for some of the more hidden bolts. But this one isn't rocket science, just a little messy.
