Most shops mark up the price of parts - not only does it add to profit/covering of costs, but it provides a little cushion if the part turns out to be bad - yes, the supplier will make good on the part, but the shop has to make up for the lost labor.
That's not necessarily getting hosed - that's how business is done. However, sometimes you can find a shop where you can provide the parts, and they'll do the labor. Some will, most won't. But all the shop will warrantee is the labor. If the parts don't work, it's up to you to make good with whomever you bought the parts from, and will need to pay the shop again if the parts need replacement.
Given time to order parts and do some work yourself, and a good relationship with a mechanic, you can have A/C work done for less. Unfortunately, with a short time window and the middle of the summer, you don't have a lot of bargaining room.
$900 isn't out of line to get A/C back with a rebuilt compressor and proper replacement of other components. You might try getting some quotes elsewhere. There's nothing special about Saab A/C - so most places that handle A/C systems can do it with no trouble.
