road cars such as ours are designed with a certain amount of compromises. As Quasi said, if you don't care about ride quality and can deal with go-kart harshness then stiffer bars (or everything else for that matter) will make sense for you. Anti-roll bars effect every action of any suspension as does any other part of your suspension. Worn shocks or springs will not only affect your ride, but handling as well as I found out recently. A destroyed bushing on one side of your anti-roll bar will adversely effect your handling to. Yes, I found that out the hard way recently also. Going wide in right hand turn you are taking at some speed will certainly get your attention!
So, to get possibly a clearer picture of why anti-roll bars can affect you ride just remember they are essentially a spring transmitting torsion between the two sides of the car.
As Aeroblues said, there is not a perfect suspension. We all have different likes/dislikes and priorities as to what we want most in our cars.
