I think some more wiser sometimes told me that the stiffness of the grease is caused by water in the grease.
Also if I remember it right the Stefa type seal rings of the rear bearing are not the most reliable ones.
If your bearing just came apart so easily, I could assume that the Stefa ring is worn out. You can clean the bearing, put new grease inside, but no guarantees how long it could last. However I think now when the bearing is open and it is not full of rust, it won't hurt anything to clean and re-grease it!
In my experience the rear bearings start to make loud humming noise when they get dirty/worn out and need replacement.
