water in oil test. Be careful

Thought my head gasket was gone. Someone advised dripping oil(from dipstick) onto hot exhaust - if water in oil it should sizzle and splutter. This sounded like a fantastic idea. So i did it. And I found I had water in oil. Some1 then said try dripping brand new oil onto hot exhaust - this also sizzled and spluttered. So, the moral of the story? I'm not sure!But its maybe a good idea always to have a test of the original 'new' oil before trying the old oil. Does anyone have similar/opposite experiences?
