From what I've seen, it's alway been pretty easy to tell if water is in the oil just by looking and sometimes even the smell. If the oil has swirling in it (not so new oil) then it's a good possibility that it's contaminated. It's hard to give an accurate description of how it'd look like, but you should be able to tell that something's not right. Water and oil really don't mix, but it can emulsify. What does your oil look like? Why do suspect the headgasket?
