The upper mount is really a torque arm. The purpose is to keep the engine movement to a minimum. With a 5-speed, a lot of engine movement can affect the shift linkage, which makes shifts less precise. Since the automatic uses a cable, there really isn't the same effect.
A secondary effect is that the engine is bolted to a subframe. If the engine moves, there will be subtle effects on the suspension geometry. That would have a minor effect on handling. I don't think it's a big effect, but if you're spending $$$ to get every little bit of performance out of the car, you shouldn't leave a stone unturned.
The automatic normally doesn't shift as hard as you can slam a manual, so I think the effect will be less with an automatic.
I'd say that since you drive hard, stiffer bushings will last longer than more compliant, OEM bushings. But I wouldn't go half-way. Do the upper and lower mounts the same way. It makes no sense to have poly upper mounts and OEM hydraulic lowers. All that will do is pass more stress onto the lowers, which will fail sooner.
