For the first minute or two of operation, the AMM is the only way the ECU schedules fuel. That's because the O2 sensor isn't at temperature yet. Once the O2 sensor is warmed up, it helps schedule fuel.
The ECU doesn't schedule fuel based on where the gas pedal is -the pedal opens the throttle, which lets in more air. The AMM measures the airflow, and more gas flows.
If the AMM is getting finicky, it doesn't see the airflow, and since the O2 sensor isn't on line yet, the ECU doesn't know you've hit the gas. If you REALLY hit the gas (at least 75% of the way down), you hit a throttle switch, and the ECU figures out you've nailed the gas. Otherwise, the engine just slowly accelerates.
I would suspect the AMM.
