I would think steam engines might constitute a different genre of engineering and thus another spec on water quality, but that's just my gut feeling and I agree with you on principle.
Since distilled water is about $1/gallon at Walmart or the supermarket, I would say that it can't hurt to use it, but as I mentioned our water is about the softest in the nation and is sourced by deep artesian wells, the same aquifer used by a popular bottled-water retailer in this area. It is so soft it is difficult to wash soap off in the shower. I just changed my thermostat the other day and I saw no signs of corrosion or deposits.
Further, my '66 Corvette has had the same ritual performed for the last 20 years (two-year change intervals, orange coolant when it was available, and Bar's Leaks). I changed its 'stat earlier this year making this the year of the thermostat for me, and its system also looked clean as a whistle. I don't recall ever replacing a thermostat in a car in 40 years of driving, except the two this year.
As for concentration, I'd say follow the instructions on the label, which is always 50:50 unless temps fall below anything you or I can imagine. It freezes here on occasion, but temps rarely fall below 20°F, well within the 50:50 spec.
