The fact that the engine is taking a long time to get to temperature could mean that the thermostat is sticking open. The engine thermostat determines when to port coolant from the engine to the radiator. Was the car slow to warm up with the old thermostat? If this is recent, give the new thermostat some time to 'break in' - yes, it shouldn't need it, but I've seen some thermostats take a little time to get working.

As to the temp swing at idle, a lot has to do with the mismatch between the engine thermostat (82C) and the radiator fan thermoswtich (89 or 90C). The engine thermostat opens at 82, and ports coolant to the radiator. As long as the radiator is running pretty cool, and it will be in the winter with air blowing over it (driving), the engine will run around 82C - about mid range.
When you're idling, there is no airflow over the radiator. The engine thermostat opens up at 82C, and ports coolant to the radiator. The fan on the radiator only comes on when the RADIATOR hits around 90C. So the engine temperature will continue to climb, because although the engine has an 82C thermostat, the coolant coming back is no cooler than around 90C. So that's the 3/4 on the gauge. At 90C, the radiator fan kicks on, cooling the coolant in the radiator to a few degrees below 90 (call it 87), then shuts off. So the engine temp is being controlled by the radiator fan thermoswitch. You've done half the temperature switch change. To finish it, you should replace the radiator fan thermoswitch with an 82C unit.

Also remember that the temperature gauge is not linear. That gauge runs through some electronics in the EDU. If 1/2 on the gauge is around 80C, 3/4 isn't 120C. I don't have the exact numbers, but mid gauge (around 1/2) is around 85C, 3/4 is around 90C, and redline is a bit over 100C, give or take.
