Dielectric grease prevents the high-voltage in the coils from going anywhere it shouldn't go. Electricity tends to seek the path of least resistance and in the case of the DI system, the 'spark' seeks a path to ground. Since the spark plugs have resistors in them and an air gap, this tendacy is even greater with such a high-voltage present in the coils (40,000 volts I believe, but don't quote me). The spark would want to go around this high resistance bypassing the spark plug and going straight to ground (read: misfire). This, of course, is not good. The grease insures that the spark stays on it's intended path by isolating/insulating it's path to ground by providing a higher resistance than the resistance inside the plug, so the spark takes the path of least resistance through the plug. This is it in a nutshell.
