will put oil into the coolant rather then the other way round. If this is the case, you may find some oil residue inside the cap to the header tank: or you could drop some coolant onto a clean surface or into a bowl and see if there is an oily sheen to it.
Sometimes leaking head gaskets just show up as gradual water loss, sometimes they go catastrophically and leave you by the side of the road with lots of scalding hot metal. Sometimes the engine will miss, start poorly or puff steam from the exhaust, sometimes there are no symptoms when driving until the temperature gauge tells you something is wrong. But I think your occasional hesitation could well be a symptom of a head leak (had similar effects with a cracked head on a Lancia once).
On the other hand, your leak from the water pump might be tiny when the engine isn't running, but much greater when the coolant in the system is circulating and under pressure. Certainly when my head gasket went at about 118K I replaced the water pump as a precautionary measure, having had one fail on an earlier car at the same sort of mileage.
