I have this type of setup on my 88' 9000T. It's a full JT 3" exhaust system from turbo to tail, and I don't have a cat fitted at all. Just a straight pipe that came with the system. I do have both the mufflers installed that came with the system in place. My car is plenty quiet even for it being 3" so I don't think your tailpipes size is the problem since the JT's just as big, almost.
My idea for you is this: (I'm gonna eventually do this myself)
Remove the stupid center muffler (cause it does nothing). Fit a good rear muffler back in it's original place, and keep the tip that you like. Might have to shorten the tip a bit to fit it to the rear muffler without sticking out past the bumper but, you'd keep the look of it.
So no cat, no center muffler. I'll also add that there's a guy here on the site (Ben) who has the full JT 3" exhaust also, but only has the rear muffler fitted vs both. I'm gonna do the same. Like I said eventually.
