Just did this a couple days ago, so I might be able to help.
The intake assembly is a complex beast, be careful to note where everything goes. Use notes & labels or if you have one, a digital camera is handy if you don't have a photographic memory!
As Steve suggested, this should be removed in parts: all accessible vacuum and coolant hoses first. Followed by throttle body & plenum chamber/top manifold. You then have access tothe fuel rail. But first remove all electrical connections that are harnessed onto the rail. Unplug the fuel pressure regulator to the return line and then remove the rail. You probably can leave the rest of the manifold onto the head, but it's no trouble to remove and lightens the load when you take off the head.
You can take off the head witht he turbo and exhaust attached, but this also adds to the weight, and there may not be much clearance to play around with.
I removed the turbo and exhaust manifold in one piece first. Manifold bolts were actually easy to remove. If not, try tightening first before untightening and give penetrating oil a chance to work its stuff.
Removing the turbo from the downpipe was difficult for me - one bolt is quite inaccessible (i hear you may need a cresent wrench for this...). In my case it was a 1/2" imperial bolt that must have been put there when exhaust was overhauled - had to cut a cheap 1/2" spanner i had in half to remove it.
