Non-ABS can be done a bunch of ways.
If you don't want ABS because your present ABS components have failed, and you're unwilling to pay to replace them, you can stick in the non-ABS master cylinder from an '86 (and up to '89, in some markets).
The earlier, non-ABS cars used vacuum for brake boost. The ABS cars use the ABS pump pressure for brake boost. So if you still want power brakes, you either need the early vacuum-assist MC, or at least keep most of the ABS system.
If you just don't want the ABS function, or want to switch it on and off, that's easy - just disconnect a wheel sensor. The ABS system will detect the fault, (light the ABS light)and ABS won't work. You'll still have full brake boost. However, I think that if you disconnect a wheel sensor, you may have to shut the car off and turn it back on to make ABS work. Not sure on that, but I think so.
