When I did the headgasket on my 1995 9000, I used several of the scotchbrite pads (the big 4X6 inch green pads) and brake cleaner to tackle the block and piston crowns. Worked great. Sometimes let the pad soaked with brake-klean sit on the piston carbon to loosen it up.
Final clean-up was accomplished with a gasket scraper - simply a razor blade holder available at any parts store.
I would recommend sending the head to a machine shop to be pressure tested and lightly machined. This will 1) Give you an absolutely flat surface 2)Check the head for cracks and 3) Return an almost new looking head to you. I was quoted $135 for this work in Northern Virginia. You'll have to remove the cams so that the valves all close, but that's pretty easy.
