I have seen three different gauge operations in the Saab-
First - the gauge goes up a little past 9:00 or so, drops down as the thermostat opens up and cold coolant rushes in, and then creeps back up again. This up and down continues with progressively smaller amplitude until a temperature equilibrium occurs. This happens when the coolant is pretty cool - first start of the day, or cold out. It also requires a thermostat that's responding quickly.
Second - the temp gauge goes up to around 9 or so, and stays in that general area. Usually when the car is warmer, so the coolant in the radiator is closer in temp to the engine. I've also seen this with thermostats that respond slower. Thermostats are mechanical devices, and each one is a little different. If the thermostat doesn't seal perfectly, or is a little slow in responding, you won't see any overshoot.
Third - the temp gauge slowly rises to only around 8:00, and it stays there like it's nailed down. This is typical of newer cars - 94 and later, or so. The temp gauge in all 9000 are not connected directly to the temperature sensor. They run through electronics in the EDU, which filters it some and puts some curve adjustment on it. In the newer cars, Saab greatly changed the gauge response - it goes up only to about 8:00, and stays there unless the engine temp gets into a dangerous range. This was to avoid all the folks worrying about temp gauges that went up near the red under normal (ie. stuck in traffic) conditions. Out of sight, out of mind.
As to the temp gauge jumping up from nothing to 9:00, as I'm gathering from the post, that's not normal. Could it be some hack in the EDU? You bet. Just remember that the sensor is greatly modified by the EDU before it gets to the gauge.
