Most rotors on cars these days are "throw-away"

rotors that really can't be turned much. There is just not enough metal to do it and not have the rotor warp a few thousand miles later. And as you note, rotors aren't expensive.
Mileage depends on how you drive. If you rack up a lot of highway miles you can go for a long time on both pads and rotors. If you do a lot of stop and go you'll wear 'em down sooner.
As long as they are smooth and the thickness is within spec leave them alone.
