Introduce an air leak to lean out mixture

You can try opening up a vacuum line in the intake to lean out the mixture and see if your disconnected O2 sensor signal transitions from the 0.8V rich indication to below the 0.45V midpoint. That should tell you if the sensor is responding properly. You just have to introduce enough air so that the mixture leans out. I'd use the body of the O2 sensor as the ground reference when doing your check of the output; if you see substantially different readings when you use that ground ref vs. other ground reference points, then you may have to see about restoring a good connection from the sensor to the chassis ground. May be corrosion buildup causing high resistance between the sensor/exhaust interface, or the exhaust/engine, engine/chassis, etc. Might temporarily try using something like a jumper cable to clamp onto the body of the O2 and connect it to the negative battery terminal.
That's why there are four wire sensors in some cars, which have a separate ground reference wire going to the ECU rather than rely on a connection through the exhaust system. Much better in every way except cost.
