DOT 3 brake fluid - the industry 'standard' for decades. With DOT 4 fluids commonly available now there's not much reason to bother.
DOT 4 brake fluid - pretty much the standard now. All chemically compatible with one another and with DOT 3 fluids. Good stuff: Valvoline Synpower (probably the easiest to find now), Castrol LMA (was for ~20 years the *only* commonly-available DOT 4 fluid), ATE Super Blue/Typ 200 (chemically the same, Super Blue is - uh - blue, which means it's technically not a DOT-spec fluid because the spec requires amber color.)
DOT 5 brake fluid - avoid it like the plague. It's silicone-based, traps air, difficult/impossible to bleed, an old-technology answer to a question no one asked.
DOT 5.1 brake fluid - the best stuff, but not really needed for road use, chemically compatible with DOT 4 and DOT 3 fluids, harder to find than the DOT 4 fluids. Note that despite the nomenclature this has NOTHING in common with DOT 5.
Change brake fluid (bleed a liter of fluid through the system) about every two years.
