The temp sensor resistance changes with temperature. There are a couple of ways to check it. If you can get to it, measure the resistance between the signal pin and ground. The resistance check would be with the cable to the ECU disconnected. Or, with the ECU connected, measure voltage to ground.
It might be right in real time, at a given temperature, but it might not be right at all temps. So check it at different temperatures. You don't need the exact temp.
At -10C (-14F), it should be 7.0-11.4K ohms (3.9 volts)
At 20C (68 F) it should be 2.1 to 2.9 Kohms (2.4 volts)
At 40C (104F) it should be 1.0 to 1.3 Kohms.
You could pull it out, and measure the resistance in a comfortable room (68f). Leave it in the refrigerator and after 15 minutes, check the temp.
