I normally prefer heat shrinked soldered connections for better long term reliability, but in this case, a good crimp connection would be the way to go, since the OEM sensor wire appears to be stainless steel or otherwise.
I'd just want to make sure the crimp connectors have sealant to keep any moisture from getting in and degrading the connection over time.
One thing I was wondering about is if there may be a thermocouple effect being introduced from the dissimilar metals being connected; with the new harness connection being copper. There appeared to be a slight voltage shift of the signal, old vs. new, but I can't draw any conclusions from that, since it could just be from the new sensor.
