sounds like it would work. Take pix of the seat and how the cover attaches so you can get it back together right. The factory cushion, IIRC was just thinner, so it may very well have been a trimmed down version of the standard seart bottom.
I remember reading somewhere that an electric carving knife is great for cutting foam. It is quicker and easier to control than a utility knife, and cuts more in one pass.
The hard part will be making the cut even all the way across the seat bottom so the cushion doesn't wind up being tilted. I guess you would have to work carefully and measure often to make sure you are on track. Depending on how the cushion is shaped you may have to take off more material at one end of the seat than the other.
