Size is less important than the design and engineering of the tire. You also need to decide what you want. An all-season (which really means 'a little snow') tire will never be as grippy as a good non-M&S-rated tire, and most of the best handling tires do not have particularly long tread life.
There's not much a variety of good performance tires in 205/55-15, based on Tire Rack's listings:
a) The Bridgestone S-03 is available and is very grippy, reasonably civilized, works well in the wet.
b) I don't know anything about the BFG g-force sport but I'd be tempted to try it, some of their older Comp TAs had all kinds of roundness problems but the KDs were round and sticky if noisy.
c) I know folks who love the Bridgestone RE750, but I have no personal experience with it; it's not a hard-core performance tire but should be a decent all-rounder. It replaced the RE730 which had the noisiest tread of any tire I've ever had on my 9000.
d) The Dunlop SP8000 is a good older design, not the grippiest out there but good tread life and ride.
There's basically nothing in a 195/60-15 that qualifies as a serious high-performance tire by present-day standards, there's a couple (the Dunlop SP400 and Bridgestone RE92) that are decent all-round driver tires.
